In our early days, just after our gastric or bariatric surgery, our nutritionist will recommend a restricted diet, but one of the few old favourites we can still enjoy is the humble egg. Highly nutritious, small, easy to digest and versatile, the egg will be a mainstay of our diet for quite a while.
Eggs are primarily an excellent source of high-quality protein, making them an ideal food for those with reduced stomach capacity. They also contain all the essential amino acids, which are crucial for maintaining muscle mass and promoting healing after surgery. Eggs are also low in calories, which helps with weight management. Moreover, they are rich in essential vitamins and minerals, including vitamin D, which is crucial for bone health, and choline, which is essential for brain function.
On the other hand, eggs are naturally high in cholesterol. However, it has been found that the cholesterol in eggs doesn’t raise cholesterol levels in the same way as foods high in trans fats and saturated fats. The problem with eggs, therefore, is more about the way they are cooked – say fried in butter or with streaky bacon – than with the egg itself. If you want to avoid cholesterol altogether, you can use the egg whites only which contain protein but no cholesterol. As for the number of eggs you should eat per week, you should consult with your nutritionist, especially if you’re diabetic, but most healthy people can eat up to seven eggs a week without increasing their risk of heart disease.

I’ve also included a wide range of egg-based meals for both the stovetop and the oven which are ideal for a fast and tasty brunch or lunch. The recipes call for one egg only, so I would recommend you use extra-large eggs.
